| Corned beef and cabbage is, according to some, about as Irish as spaghetti and meatballs is Italian... that is, not really... you were probably more likely to see salt pork boiled with potatoes and cabbage on the Irish country table. Others would point to corned beef as an Easter dish, a meaty celebration of the end of Lent. 'Corning', of course, has nothing to do with corn... it describes dry-curing of meat with 'corns' of salt.Freezes well. |
