Quinoa Edamame Salad (16 oz)
A fairly small sub-genre of culinaria, Peruvian/Japanese fusion (I'm not making this up), is the inspiration for this incredibly delicious and simultaneously nourishing salad... quinoa with fresh soybeans, shiitakes, shiso (Japanese mint), and a dab of wasabi for good measure... Vegan, gluten-free.

King Ranch Chicken (Feeds 2)
The now mighty King Ranch was first spied by Captain Richard King during a horse ride through the Wild Horse Desert mesquite country between Brownsville and Corpus Christi.  Since then, the ranch has contributed two major beef breeds and several award-winning thoroughbreds.  Its greatest contribution, however, has been this dish (probably NOT from the King Ranch, in all truth, but bear with me), which is a combination of campesino cuisine such as chilaquiles mixed with suburban casserole principles.  This is an original, from scratch recipe, a far cry from the recipe on the side of the can of cream of mushroom soup... Freezes well.

Shepherds Pie (Feeds 2)
Sheep herding is one of the loneliest, quietest jobs on the planet.  I bet you could get a ton of reading done.  Probably get wool really cheap.  Herding, in my non-expert opinion, as I've witnessed it, just seems like an excuse for the men of the village to take off and walk around and take naps while the women do all the work. Classic shepherd's pie (except the sheep)... ours features a layer of ground beef and vegetables in homemade gravy, topped with eggy, crusty mashed potatoes...
